The Sap Is Running!

The sap is dripping from this tapped maple tree on Warren Avenue. I like the recycled collection devices used here, though I have to say that nothing beats the sound of sap dripping into a tin pail except tasting the final "liquid gold" or maple sugar. If I did my research and math correctly, the owner of this tap may collect 10 gallons of sap which when boiled down should yield about 1 quart of syrup.

I will share some blueberry pancakes if the syrup maker wants to share some of the "Quincy Amber".

What is your favorite kind of pancakes? Do you like real maple syrup?
